    • 2 pounds (900g) ground beef or pork
    • 1 medium onion, finely chopped
    • 3 cloves garlic, minced
    • 1 green bell pepper, diced
    • 1 large carrot, grated
    • 2 cans (28 oz each) of crushed tomatoes
    • 1 can (6 oz) tomato paste
    • 1 cup beef or vegetable broth
    • 1 tablespoon olive oil
  • Seasonings:
    • 1 teaspoon dried oregano
    • 1 teaspoon dried basil
    • 1 teaspoon smoked paprika
    • 1 teaspoon sugar
    • Salt and pepper to taste
    • 1 bay leaf
    • 2 tablespoons fresh parsley (chopped, for garnish)

Instructions:

  1. Prepare the Base:
    • Heat olive oil in a large pot over medium heat.
    • Add chopped onion and garlic. Sauté until fragrant and translucent, about 2 minutes.
    • Add grated carrot and diced bell pepper, and cook for another 3-4 minutes.
  2. Cook the Meat:
    • Add ground beef or pork to the pot. Break it apart with a spoon and cook until browned and no longer pink. Drain excess fat if needed.
  3. Simmer the Sauce:
    • Stir in crushed tomatoes, tomato paste, and broth. Add oregano, basil, paprika, sugar, salt, pepper, and the bay leaf.
    • Reduce the heat to low and let the sauce simmer uncovered for 30-40 minutes, stirring occasionally. Add more broth if needed for the desired consistency.
  4. Taste and Adjust:
    • Remove the bay leaf. Taste the sauce and adjust seasonings as needed.
  5. Garnish and Serve:
    • Sprinkle with fresh parsley. Serve warm over your favorite pasta, or store in sterilized jars for later use.
