Ingredients:
For the Base:
- 1 lb ground beef
- 1 packet taco seasoning
- 1 can (15 oz) diced tomatoes (drained)
- 1 can (15 oz) corn (drained)
- 1 can (15 oz) black beans (drained and rinsed)
- 1/2 cup salsa
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 bag tortilla chips (crushed)
For the Toppings:
- 1/2 cup sour cream
- 1/2 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1 jalapeño (sliced)
- 1/4 cup chopped cilantro (optional)
Instructions:
- Preheat Oven:
- Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- Cook the Beef:
- In a skillet over medium heat, cook the ground beef until browned.
- Drain excess grease and stir in taco seasoning, diced tomatoes, corn, black beans, and salsa. Let it simmer for 5 minutes.
- Assemble the Casserole:
- Layer half of the crushed tortilla chips at the bottom of the baking dish.
