Crispy Baked Garlic Butter Potatoes

Recipe: Crispy Baked Garlic Butter Potatoes

Ingredients:

  • 6–8 medium Yukon Gold or baby potatoes (halved lengthwise)
  • 3 tbsp unsalted butter (melted)
  • 2 tbsp olive oil
  • 3 garlic cloves (minced)
  • 1 tsp dried oregano or thyme
  • 1 tsp paprika (optional, for extra flavor)
  • Salt and freshly ground black pepper to taste
  • 2 tbsp fresh parsley (chopped, for garnish)
  • 2 tbsp grated Parmesan cheese (optional, for extra crispiness)

Instructions:

  1. Preheat Oven:
    Preheat your oven to 400°F (200°C).
  2. Prep the Potatoes:
    Wash and scrub the potatoes thoroughly. Slice them in half lengthwise. Make small shallow cuts across the surface of the flesh side for better flavor absorption.
  3. Prepare Garlic Butter Mixture:
    In a bowl, combine the melted butter, olive oil, minced garlic, oregano (or thyme), paprika (if using), salt, and pepper.
  4. Coat the Potatoes:
    Brush the garlic butter mixture generously over the cut side of each potato half. Cut them down on a baking tray lined with parchment or lightly greased.
