Recipe: Classic Stuffed Bell Peppers
Ingredients:
- 4 large bell peppers (any color, tops cut off, and seeds removed)
- 1 lb ground beef or turkey (or plant-based meat forthe vegetarian version)
- 1 cup cooked rice (white or brown)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes (drained)
- 1/2 cup tomato sauce (plus extra for topping)
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 1–2 cups shredded cheese (cheddar, mozzarella, or a blend)
Instructions:
- Preheat oven to 375°F (190°C).
- Prepare the peppers:
Cut the tops off the peppers, remove seeds, and place them upright in a baking dish. - Cook the filling:
In a skillet, sauté the chopped onion and garlic until soft. Add ground meat and cook until browned. Stir in cooked rice, diced tomatoes, tomato sauce, Italian seasoning, salt, and pepper. Let it simmer for 5–10 minutes. - Stuff the peppers:
Fill each pepper generously with the meat and rice mixture. Spoon a little extra tomato sauce on top of each one. - Top with cheese:
Sprinkle a generous amount of shredded cheese on top of each stuffed pepper. - Bake:
Cover with foil and bake for 30 minutes. Remove foil and bake an additional 10–15 minutes until cheese is bubbly and slightly golden. - Serve:
