Ingredients:
For the Chocolate Sponge Cake:
- 4 large eggs
- 3/4 cup granulated sugar
- 1 tsp vanilla extract
- 1/4 cup vegetable oil
- 1/2 cup milk
- 1/2 cup all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1 tsp baking powder
- 1/4 tsp salt
For the Cream Cheese Filling:
- 8 oz (225g) cream cheese, softened
- 1/4 cup unsalted butter, softened
- 1 1/2 cups powdered sugar
- 1 tsp vanilla extract
- 2–3 tbsp milk or cream (optional, for smooth consistency)
For the Topping:
- 1/2 cup heavy cream (whipped or used as glaze)
- Chocolate shavings or curls
- Maraschino or fresh cherries
- Powdered sugar (for dusting, optional)
Instructions:
Make the Chocolate Sponge Cake:
- Preheat oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper.
- In a large bowl, beat the eggs and sugar until thick and pale (about 5 minutes).
- Add vanilla extract, oil, and milk. Mix until combined.
- Sift in flour, cocoa powder, baking powder, and salt. Gently fold to incorporate.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 10–12 minutes, or until the cake springs back when touched lightly.
- While still warm, place a clean kitchen towel on the cake and roll it up (with the parchment inside). Let it cool completely.
Prepare the Cream Cheese Filling:
- Beat cream cheese and butter together until smooth and fluffy.
- Add powdered sugar and vanilla. Beat until creamy. Add a little milk or cream if needed for a spreadable consistency.
Assemble the Swiss Roll:
- Carefully unroll the cooled cake and remove the parchment.
- Spread the cream cheese filling evenly over the surface.
- Roll the cake back up tightly (without the towel), seam-side down.
- Frost the top with a little whipped cream or extra cream cheese mixture.
Decorate:
- Sprinkle generously with chocolate shavings.
- Garnish with cherries on top.
- Dust with powdered sugar if desired.
