Cheesy Ham and Cheese Empanadas

Introduction:

These cheesy ham and cheese empanadas are a perfect combination of crispy, golden-brown pastry and gooey, melty cheese with savory ham. They are easy to make and perfect as a snack, appetizer, or even a quick meal. The addition of a cheesy topping gives them an irresistible crunch and extra flavor.


Ingredients:

For the Dough:

  • 2 ½ cups all-purpose flour
  • ½ cup unsalted butter (cold, cubed)
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • ½ cup cold water

For the Filling:

  • 1 ½ cups cooked ham (diced)
  • 1 ½ cups shredded mozzarella or cheddar cheese
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder

For the Topping:

  • 1 egg (for egg wash)
  • ½ cup shredded cheese (for topping)
  • Fresh parsley (for garnish)

Instructions:

  1. Prepare the Dough:
    • In a mixing bowl, combine flour, salt, and sugar.
    • Cut in the butter until the mixture resembles coarse crumbs.
    • Gradually add cold water and knead until a smooth dough forms.
    • Wrap in plastic and refrigerate for 30 minutes.
  2. Prepare the Filling:
    • In a bowl, mix diced ham, shredded cheese, black pepper, and garlic powder.
  3. Assemble the Empanadas:
    • Preheat oven to 375°F (190°C).
    • Roll out the dough and cut it into circles (about 5 inches in diameter).
    • Place a spoonful of filling in the center of each circle.
    • Fold the dough over the filling and seal the edges by pressing with a fork.
  4. Bake the Empanadas:
    • Place the empanadas on a parchment-lined baking sheet.
    • Brush with egg wash and sprinkle extra shredded cheese on top.
    • Bake for 20-25 minutes or until golden brown.
  5. Serve and Enjoy:
    • Let them cool slightly, garnish with fresh parsley, and serve warm!
