Recipe:

Ingredients:

For the Dough:

  • 3 1/2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon active dry yeast
  • 1/2 teaspoon salt
  • 4 large eggs, room temperature
  • 1/2 cup unsalted butter, softened
  • 1/2 cup warm milk
  • 2 tablespoons poppy seeds (optional)

For the Egg Wash:

  • 1 egg, beaten
  • 1 tablespoon milk

Instructions:

  1. Prepare the dough:
    • In a large bowl, whisk together the flour, sugar, yeast, salt, and poppy seeds.
    • In a separate bowl, combine the warm milk, eggs, and softened butter. Mix until smooth.
    • Gradually add the wet ingredients to the dry ingredients, stirring until a soft dough forms. Knead for 8-10 minutes until smooth and elastic.
  2. First rise:
    • Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for 1-2 hours or until doubled in size.
  3. Shape the buns:
    • Once the dough has risen, punch it down to remove the air and divide it into equal portions (about 8-10 pieces).
    • Shape each piece into a smooth ball and place them into individual ramekins (as shown in your image) or onto a baking sheet lined with parchment paper.
    • Cover again and let them rise for 30-40 minutes or until puffed up.
  4. Preheat the oven:
    • While the buns are rising, preheat the oven to 375°F (190°C).
  5. Egg wash and bake:
    • Brush the tops of the buns with the egg wash (a mixture of beaten egg and milk) to give them that glossy, golden crust.
    • Bake in the oven for 15-20 minutes or until the tops are golden brown.
  6. Cool and serve:
    • Once done, transfer the buns to a wire rack to cool. Serve warm or at room temperature with butter, and jam, or enjoy them as they are.

These golden poppy seed brioche buns are light, airy, and perfect to accompany any meal!
