Ingredients:

  • Ground beef – 1 pound
  • Onion – 1 large, diced
  • Green bell pepper – 1, diced
  • Garlic – 3 cloves, minced
  • Diced tomatoes – 1 can (14.5 ounces)
  • Tomato sauce – 1 can (8 ounces)
  • Kidney beans – 1 can (15 ounces), drained and rinsed
  • Black beans – 1 can (15 ounces), drained and rinsed
  • Beef broth – 1 cup
  • Chili powder – 2 tablespoons
  • Ground cumin – 1 tablespoon
  • Paprika – 1 teaspoon
  • Oregano – 1 teaspoon
  • Salt – to taste
  • Pepper – to taste
  • Optional toppings: shredded cheese, sour cream, chopped green onions, or jalapeño slices

Instructions:

  1. Cook the Beef
In a large pot, cook the ground beef over medium heat until browned. Drain any excess fat.
  2. Sauté the Vegetables
Add the diced onion, green bell pepper, and minced garlic to the pot. Sauté for 3-5 minutes, until the vegetables are softened and aromatic.
  3. Add the Tomatoes and Beans
Pour in the diced tomatoes (with juices), tomato sauce, kidney beans, and black beans. Stir well to combine.
  4. Pour in the Broth and Seasonings
Add the beef broth, chili powder, cumin, paprika, oregano, salt, and pepper. Mix thoroughly to distribute the spices evenly.
  5. Simmer
Bring the chili to a simmer, then reduce the heat to low. Cover and let it simmer for at least 30 minutes to allow the flavors to meld together. Stir occasionally to prevent sticking.
  6. Adjust Seasoning
Taste the chili and adjust the seasonings if needed. If you prefer a thicker chili, let it simmer uncovered for an additional 15-20 minutes.
  7. Serve and Garnish
Serve hot in bowls with your favorite toppings like shredded cheese, sour cream, chopped green onions, or jalapeño slices.

Enjoy!
