Recipe:

Ingredients:

For the crust:

  • 1 pre-made pie crust (or homemade pastry crust)
  • Optional: 1/4 cup shredded coconut (to enhance the crust flavor)

For the coconut filling:

  • 2 cups (480ml) whole milk
  • 1 cup (240ml) coconut milk
  • 3/4 cup (150g) granulated sugar
  • 1/3 cup (40g) cornstarch
  • 4 large egg yolks
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup (90g) shredded sweetened coconut

For the topping:

  • 1 1/2 cups (360ml) heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1/3 cup (30g) toasted coconut flakes

Instructions:

Step 1: Prepare the Crust

  1. Preheat your oven to 375°F (190°C).
  2. Roll out the pie crust into a 9-inch pie dish and prick the base with a fork. Bake for 15–20 minutes until golden brown.
    • Optional: Add shredded coconut to the pie crust dough before baking for a hint of extra coconut flavor.
  3. Let the crust cool completely.

Step 2: Make the Coconut Filling

  1. In a medium saucepan, whisk together milk, coconut milk, sugar, cornstarch, egg yolks, and salt.
  2. Cook over medium heat, stirring constantly, until the mixture thickens (about 5–7 minutes).
  3. Remove from heat and stir in vanilla extract and shredded coconut.
  4. Pour the filling into the cooled pie crust. Cover with plastic wrap (pressed onto the surface) to prevent skin from forming. Refrigerate for at least 4 hours or until fully set.

Step 3: Prepare the Topping

  1. Using an electric mixer, beat heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  2. Spread or pipe the whipped cream over the chilled coconut filling.
  3. Sprinkle toasted coconut flakes on top for a decorative finish.

Step 4: Serve

  • Slice and enjoy this creamy coconut treat!

Tips:

  • Toasting coconut flakes enhances their flavor. Toast them in a dry skillet over low heat, stirring frequently, until golden brown.
  • This pie can be made a day in advance, making it a great dessert for entertaining.

Rich, creamy, and full of coconut flavor, this Coconut Cream Pie will transport you to a tropical paradise with every bite!
