Introduction:

These homemade chocolate coconut bars are the perfect treat for coconut lovers! With a creamy coconut center coated in smooth chocolate, they taste just like a classic candy bar but are super easy to make at home. They are perfect for gifting, parties, or simply satisfying your sweet cravings.

Recipe:

Ingredients:

  • 2 cups shredded coconut
  • 1 cup sweetened condensed milk
  • 1 teaspoon vanilla extract (optional)
  • 1 1/2 cups chocolate chips (milk or dark)
  • 1 tablespoon coconut oil or vegetable oil

Instructions:

  1. Prepare the Coconut Filling:
    • In a mixing bowl, combine shredded coconut, sweetened condensed milk, and vanilla extract (if using). Mix until the coconut is fully coated and forms a sticky, moldable mixture.
  2. Shape the Bars:
    • Small portions of the mixture should be shaped into rectangular bars. Place the bars on a parchment-lined baking sheet.
    • Freeze the bars for 20–30 minutes until firm.
  3. Melt the Chocolate:
    • Melt the chocolate chips and coconut oil together in a microwave or double boiler. Stir until smooth and glossy.
  4. Coat the Bars:
    • Using a fork or skewer, dip each coconut bar into the melted chocolate, ensuring it’s fully coated.
    • Let the excess chocolate drip off, then place the coated bars back on the parchment-lined sheet.
  5. Set the Chocolate:
    • Refrigerate the bars for 20–30 minutes or until the chocolate hardens.
  6. Serve and Enjoy:
    • Once set, enjoy your homemade chocolate coconut bars! Store them in an airtight container in the fridge for up to a week.

These treats are indulgent, simple to make, and loved by all ages!
