Decadent Chocolate Layer Cake with Ganache

  • 1¾ cups (220g) all-purpose flour
  • 1¾ cups (350g) granulated sugar
  • ¾ cup (75g) unsweetened cocoa powder

  • 1½ teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup (240ml) whole milk
  • ½ cup (120ml) vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup (240ml) boiling water

For the Chocolate Filling:

  • 1½ cups (375ml) heavy cream
  • 12 oz (340g) semisweet or milk chocolate, chopped

For the Ganache Topping:

  • 1 cup (250ml) heavy cream
  • 8 oz (225g) semisweet chocolate, chopped

Instructions:

  1. Bake the Cake Layers:
    • Preheat your oven to 350°F (175°C) and grease two 9-inch (23cm) round cake pans. Line the bottoms with parchment paper.
    • In a large bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
    • Add the eggs, milk, oil, and vanilla extract. Mix until smooth.
    • Gradually stir in the boiling water (the batter will be thin).
    • Divide the batter evenly between the prepared pans and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
    • Let the cakes cool completely.
  2. Prepare the Chocolate Filling:
    • Heat the heavy cream in a saucepan until it just begins to simmer.
    • Pour the hot cream over the chopped chocolate and let it sit for 2 minutes.
    • Stir until smooth and glossy. Let it cool and thicken to a spreadable consistency.
  3. Prepare the Ganache Topping:
    • Heat the heavy cream in a saucepan until it begins to simmer.
    • Pour the cream over the chopped chocolate and let it sit for 2 minutes.
    • Stir until smooth and set aside to cool slightly.
  4. Assemble the Cake:
    • Place one cake layer on a serving plate. Spread the chocolate filling evenly on top.
    • Place the second cake layer on top and press gently.
    • Pour the ganache over the top of the cake, letting it drip down the sides for a glossy finish.
  5. Decorate and Serve:
    • Chill the cake in the refrigerator for at least 30 minutes before slicing.
    • Garnish with berries, mint leaves, or chocolate shavings if desired.
