Introduction:

This cheesy sausage and pepper bake is a hearty, flavorful dish packed with Italian sausage, bell peppers, and gooey melted cheese. It’s a perfect low-carb option, easy to make, and great for meal prep or a family dinner. The combination of savory sausage, sweet bell peppers, and cheesy goodness makes it irresistible!


Ingredients:

  • 1 lb Italian sausage (mild or spicy)
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small onion, sliced
  • 2 cloves garlic, minced
  • 1 cup marinara sauce
  • 1 teaspoon Italian seasoning
  • ½ teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 1 ½ cups shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 1 tablespoon olive oil

Instructions:

  1. Preheat & Prep:
    • Preheat your oven to 375°F (190°C).
    • Grease small foil pans or a baking dish.
  2. Cook the Sausage:
    • In a skillet, heat olive oil over medium heat.
    • Add the Italian sausage, breaking it apart as it cooks, until browned and fully cooked. Remove and set aside.
  3. Sauté the Vegetables:
    • In the same skillet, add onions and bell peppers.
    • Sauté for 5-7 minutes until slightly softened.
    • Add minced garlic, Italian seasoning, red pepper flakes, salt, and black pepper. Stir for 1-2 minutes.
  4. Assemble the Bake:
    • In the baking dish or foil pans, spread a thin layer of marinara sauce.
    • Add the cooked sausage and sautéed vegetables on top.
    • Sprinkle shredded mozzarella and Parmesan cheese over everything.
  5. Bake & Serve:
    • Place in the oven and bake for 15-20 minutes until cheese is bubbly and golden brown.
    • Let it cool slightly, then serve hot!
