  • 2 cloves garlic, minced
  • 2 cups shredded cheddar cheese (or a cheese blend)
  • 1½ cups milk
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • Salt & pepper to taste
  • ½ tsp paprika or chili flakes (optional, for a little kick)

Instructions:

1. Cook the Pasta:

  • Bring a large pot of salted water to a boil.
  • Cook pasta according to package instructions until al dente. Drain and set aside.

2. Cook the Sausage:

  • In a skillet over medium heat, cook the sausage, breaking it apart until browned.
  • Add chopped onion and garlic, cooking until fragrant and tender. Set aside.

3. Make the Cheese Sauce:

  • In a saucepan, melt butter over medium heat.
  • Whisk in flour and cook for 1-2 minutes to form a roux.
  • Slowly add milk, whisking constantly until thickened.
  • Stir in 1½ cups of shredded cheese, saving the rest for topping.

4. Assemble the Casserole:

  • Preheat oven to 375°F (190°C).
