- 2 cups shredded cheddar cheese (or a cheese blend)
- 1½ cups milk

- 2 tbsp all-purpose flour
- Salt & pepper to taste
- ½ tsp paprika or chili flakes (optional, for a little kick)
Instructions:
1. Cook the Pasta:
- Bring a large pot of salted water to a boil.
- Cook pasta according to package instructions until al dente. Drain and set aside.
2. Cook the Sausage:
- In a skillet over medium heat, cook the sausage, breaking it apart until browned.
- Add chopped onion and garlic, cooking until fragrant and tender. Set aside.
3. Make the Cheese Sauce:
- In a saucepan, melt butter over medium heat.
- Whisk in flour and cook for 1-2 minutes to form a roux.
- Slowly add milk, whisking constantly until thickened.
- Stir in 1½ cups of shredded cheese, saving the rest for topping.
- Season with salt, pepper, and paprika (if using).
4. Assemble the Casserole:
- Preheat oven to 375°F (190°C).
- In a large mixing bowl or the casserole dish, combine cooked pasta, sausage mixture, and cheese sauce. Mix well.
- Pour into a greased baking dish and sprinkle remaining cheese on top.
5. Bake:
- Bake uncovered for 20–25 minutes or until the top is golden and bubbly.
Tips:
- Add bell peppers, spinach, or mushrooms for extra nutrition and color.
- Try swapping sausage with ground beef or chicken for a twist.
- Want extra gooeyness? Add a handful of mozzarella to the cheese blend.
