Recipe:

Ingredients:

  • 1 lb ground beef
  • 4 cups potatoes, peeled and diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 can diced tomatoes (14.5 oz), undrained
  • 1 cup shredded cheddar cheese
  • 1 cup milk or heavy cream
  • 2 tbsp flour (for thickening, optional)
  • Salt and pepper to taste
  • Green onions, chopped (for garnish)
  • Crumbled bacon (optional for garnish)

Instructions:

  1. Brown the Beef: In a skillet, cook the ground beef over medium heat until browned. Drain the excess fat and transfer the beef to the slow cooker.
  2. Prepare the Soup Base: Add diced potatoes, onion, garlic, and beef broth to the slow cooker with the cooked beef. Stir in the can of diced tomatoes, and season with salt and pepper.
  3. Cook: Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the potatoes are tender.
  4. Add Cheese and Milk: About 30 minutes before serving, whisk together milk and flour (if using) to thicken the soup slightly. Pour the mixture into the slow cooker along with shredded cheddar cheese. Stir well, allowing the cheese to melt into the soup.
  5. Garnish and Serve: Once the soup is creamy and thickened, ladle it into bowls. Top with green onions, crumbled bacon, and extra cheese if desired. Enjoy your delicious cheeseburger soup!
