Ingredients:

For the Chicken:

  • 2 large chicken breasts (butterflied and pounded thin)
  • 1/2 cup shredded mozzarella or Gruyère cheese
  • 1/4 cup cooked and chopped mushrooms
  • 2 tablespoons cream cheese
  • 1 tablespoon fresh parsley (chopped)
  • Salt and pepper to taste
  • 2 tablespoons olive oil

For the Mushroom Sauce:

  • 2 tablespoons butter
  • 1 cup sliced mushrooms
  • 1 clove garlic (minced)
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions:

  1. Prepare the Chicken:
    • Preheat your oven to 375°F (190°C).
    • Mix mozzarella, cream cheese, cooked mushrooms, parsley, salt, and pepper in a small bowl.
    • Stuff each chicken breast with the mixture and secure with toothpicks.
  2. Sear the Chicken:
    • Heat olive oil in a large skillet over medium heat.
    • Sear the chicken breasts on both sides until golden brown (about 3 minutes per side). Transfer to a baking dish and bake for 20-25 minutes, or until cooked through.
  3. Make the Sauce:
    • In the same skillet, melt the butter and sauté the mushrooms until golden. Add garlic and cook for 1 minute.
    • Pour in chicken broth and simmer for 2-3 minutes.
    • Stir in heavy cream and Parmesan cheese. Simmer until the sauce thickens slightly.
