Cheesy Taco Casserole – A Crowd-Pleasing Favorite

Ingredients:

For the Base:

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can (15 oz) diced tomatoes (drained)
  • 1 can (15 oz) corn (drained)
  • 1 can (15 oz) black beans (drained and rinsed)
  • 1/2 cup salsa
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 bag tortilla chips (crushed)

For the Toppings:

  • 1/2 cup sour cream
  • 1/2 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1 jalapeño (sliced)
  • 1/4 cup chopped cilantro (optional)

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Cook the Beef:
    • In a skillet over medium heat, cook the ground beef until browned.
    • Drain excess grease and stir in taco seasoning, diced tomatoes, corn, black beans, and salsa. Let it simmer for 5 minutes.
  3. Assemble the Casserole:
    • Layer half of the crushed tortilla chips at the bottom of the baking dish.
    • Spread the beef mixture evenly over the chips.
    • Sprinkle cheddar and Monterey Jack cheese on top.
    • Add another layer of crushed tortilla chips.
  4. Bake:
    • Bake uncovered for 20-25 minutes until the cheese is melted and bubbly.
  5. Add Toppings & Serve:
    • Remove from oven and let it cool slightly.
    • Top with sour cream, shredded lettuce, diced tomatoes, sliced jalapeños, and cilantro.
