Recipe: Chocolate Caramel Pecan Delight Bars

Ingredients:

For the base layer:

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup brown sugar (packed)
  • 2 cups all-purpose flour
  • 1/2 tsp salt

For the caramel layer:

  • 1 cup unsalted butter
  • 1 cup brown sugar (packed)
  • 1/4 cup light corn syrup or golden syrup
  • 1 can (14 oz) sweetened condensed milk

For the topping:

  • 2 cups semi-sweet or milk chocolate chips (or chocolate squares)
  • 1 cup chopped pecans (toasted for extra flavor, optional)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or line it with parchment paper.
  2. Make the base layer:
    In a mixing bowl, cream together the butter and brown sugar. Add in the flour and salt, and mix until crumbly. Press the mixture evenly into the bottom of the prepared baking dish.
    Bake for 15-18 minutes or until lightly golden.
  3. Prepare the caramel layer:
    In a saucepan over medium heat, combine butter, brown sugar, corn syrup, and sweetened condensed milk. Stir constantly until it starts to boil.
    Reduce heat to low and simmer for 5–7 minutes, stirring constantly until it thickens slightly and turns golden.
  4. Pour the caramel:
    Carefully pour the caramel over the baked crust. Spread it evenly with a spatula. Let it sit for about 5 minutes.
  5. Add chocolate and nuts:
    While the caramel is still warm, sprinkle the chocolate chips (or place chocolate squares) on top. Let them melt slightly, then gently spread if desired.
    Sprinkle chopped pecans evenly over the melted chocolate.
  6. Cool and set:
    Allow the dessert to cool at room temperature, then chill in the fridge for 1–2 hours or until fully set.
  7. Slice and serve:
