Cinnamon Apple Loaf Cake with Glaze

Ingredients

For the Cake:
  • 2 cups (250g) all-purpose flour

  • 3/4 cup (150g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup (120ml) milk or buttermilk
  • 2 medium apples, peeled, cored, and diced
For the Cinnamon Swirl:
  • 1/3 cup (70g) brown sugar
  • 1 teaspoon ground cinnamon
For the Glaze:
  • 1/2 cup (60g) powdered sugar
  • 1-2 tablespoons milk
  • 1/4 teaspoon vanilla extract

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease and line a loaf pan with parchment paper.
  2. Prepare the Cake Batter:
    • In a bowl, whisk together the flour, baking powder, baking soda, and salt.
    • In another bowl, cream the butter and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Mix in the vanilla extract.
    • Gradually add the dry ingredients to the wet mixture, alternating with milk. Start and end with the dry ingredients. Mix until just combined.
  3. Add Apples and Cinnamon Swirl:
    • Gently fold in the diced apples.
    • In a small bowl, mix the brown sugar and cinnamon for the swirl.
  4. Layer the Batter:
    • Pour half of the batter into the prepared loaf pan. Sprinkle half of the cinnamon sugar mixture over the batter. Add the remaining batter and sprinkle the rest of the cinnamon sugar on top. Use a knife to create a swirl pattern.
  5. Bake:
    • Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean. Allow the loaf to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  6. Prepare the Glaze:
    • In a small bowl, whisk the powdered sugar, milk, and vanilla until smooth. Drizzle the glaze over the cooled loaf.
