Classic Cinnamon Rolls with Creamy Glaze

  • 2 large eggs
  • 4 cups (500g) all-purpose flour
  • 1 teaspoon salt

For the cinnamon filling:

  • 1/2 cup (115g) unsalted butter, softened
  • 1 cup (200g) brown sugar
  • 2 tablespoons ground cinnamon

For the cream cheese glaze:

  • 4 ounces (115g) cream cheese, softened
  • 1/4 cup (60g) unsalted butter, softened
  • 1 1/2 cups (180g) powdered sugar
  • 1 teaspoon vanilla extract
  • 2–3 tablespoons milk (to thin the glaze)

Instructions:

Step 1: Make the Dough

  1. In a small bowl, combine warm milk and yeast. Let it sit for 5–10 minutes until frothy.
  2. In a large mixing bowl, combine sugar, melted butter, eggs, and yeast mixture. Mix until combined.
  3. Gradually add flour and salt, mixing until a soft dough forms. Knead for 5–7 minutes on a floured surface until smooth and elastic.
  4. Place the dough in a greased bowl, cover with a clean towel, and let it rise in a warm place for 1 hour or until doubled in size.

Step 2: Prepare the Filling

  1. In a bowl, mix softened butter, brown sugar, and cinnamon until a paste forms.

Step 3: Assemble the Rolls

  1. Roll out the dough on a floured surface into a large rectangle (about 16×12 inches).
  2. Spread the cinnamon-sugar filling evenly over the dough.
  3. Roll up the dough tightly from the long side, then cut into 12 equal slices.
  4. Place the rolls in a greased 9×13-inch baking dish. Cover and let them rise again for 30–45 minutes.

Step 4: Bake the Rolls

  1. Preheat the oven to 350°F (175°C).
  2. Bake the rolls for 20–25 minutes or until golden brown.

  1. Beat cream cheese and butter together until smooth. Gradually add powdered sugar, vanilla, and milk until the glaze reaches your desired consistency.

  • Spread the glaze over the warm rolls, allowing it to melt slightly.
