Creamy Shrimp & Spinach Stuffed Pasta Rolls

Recipe: Creamy Shrimp & Spinach Stuffed Pasta Rolls

Ingredients:

For the filling:

  • 12 lasagna noodles (or fresh pasta sheets)
  • 1 tbsp olive oil
  • 2 cups shrimp (peeled, deveined, chopped, plus whole ones for garnish)
  • 2 cups fresh spinach
  • 1 cup ricotta cheese
  • 1/2 cup shredded mozzarella
  • 1/4 cup grated parmesan cheese
  • 2 garlic cloves, minced
  • Salt and pepper, to taste

For the sauce:

  • 3 tbsp butter
  • 2 garlic cloves, minced
  • 1 cup heavy cream
  • 1/4 cup grated parmesan
  • Salt and pepper, to taste
  • Fresh parsley or thyme for garnish

Instructions:

  1. Cook the pasta:
    Boil lasagna noodles according to package instructions. Drain and lay them flat on parchment paper or a lightly oiled surface to prevent sticking.
  2. Make the filling:
    In a pan, heat olive oil over medium heat. Add chopped shrimp and cook for 2–3 minutes until just pink. Add garlic and spinach; sauté until spinach wilts.
    Remove from heat and let cool slightly. Stir in ricotta, mozzarella, parmesan, salt, and pepper.
  3. Assemble the rolls:
    Spread a generous spoonful of filling onto each noodle and roll it up gently. Place rolls seam-side down in a greased baking dish.
  4. Prepare the sauce:
    In a saucepan, melt butter and sauté garlic for about 1 minute. Add heavy cream and bring to a simmer. Stir in parmesan, salt, and pepper. Let it simmer until slightly thickened.
  5. Add sauce & shrimp topping:
    Pour sauce over the rolls. Top each roll with a whole shrimp for presentation.
  6. Bake:
    Bake at 375°F (190°C) for 20–25 minutes, until bubbly and golden. If desired, broil for a couple of minutes at the end for extra browning.
  7. Garnish & serve:
    Sprinkle with fresh herbs like parsley or thyme and serve hot with garlic bread or a fresh green salad.
