Recipe:

Ingredients:

For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter (cold and cubed)
  • 2-3 tablespoons cold water
  • 1/4 teaspoon salt

For the Custard Filling:

  • 2 1/2 cups whole milk
  • 3/4 cup granulated sugar
  • 1/4 cup cornstarch
  • 4 egg yolks
  • 2 teaspoons pure vanilla extract
  • 1/4 teaspoon salt
  • 2 tablespoons unsalted butter

For Topping:

  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract
  • A pinch of cinnamon or nutmeg (optional, for garnish)

Instructions:

1. Prepare the Pie Crust:

  1. In a bowl, combine flour and salt. Cut in the cold butter using a pastry cutter or your hands until the mixture resembles coarse crumbs.
  2. Gradually add cold water, 1 tablespoon at a time, mixing until the dough comes together. Shape into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.
  3. Roll out the chilled dough on a floured surface and transfer it to a pie dish. Trim the edges and crimp them for a decorative finish.
  4. Preheat the oven to 375°F (190°C). Prick the crust with a fork, line with parchment paper, and fill with pie weights or dried beans. Bake for 15 minutes, remove weights, and bake for another 5-7 minutes until golden. Cool completely.

2. Make the Custard Filling:

  1. In a saucepan, combine milk, sugar, and salt. Heat over medium heat until warm but not boiling.
  2. In a separate bowl, whisk together egg yolks and cornstarch. Gradually add some of the warm milk to the egg mixture to temper it, then pour everything back into the saucepan.
  3. Cook over medium-low heat, stirring constantly, until the mixture thickens. Remove from heat, add butter and vanilla extract, and stir until smooth.
  4. Pour the custard into the cooled crust and smooth the top. Refrigerate for at least 4 hours or until fully set.

3. Prepare the Whipped Topping:

  1. In a chilled bowl, beat heavy whipping cream, powdered sugar, and vanilla extract until soft peaks form.
  2. Spread or pipe the whipped cream over the chilled custard.

4. Garnish and Serve:

  • Sprinkle with a pinch of cinnamon or nutmeg for a festive touch, slice, and serve chilled.

Tips:

  • For an extra flavor boost, consider adding a teaspoon of almond extract or lemon zest to the custard.
  • The pie can be prepared a day in advance and stored in the fridge, making it perfect for entertaining.

Enjoy this creamy, dreamy custard pie that melts in your mouth with every bite!
