  • 1/2 cup raisins or dried cranberries
  • 1/4 cup dried apricots or any dried fruit (chopped)
  • 1/4 cup rolled oats (optional)
  • 1/3 cup honey or maple syrup (as a binder)
  • 2 tablespoons coconut oil or melted butter
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions:

  1. Preheat the Oven:
    Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper.
  2. Mix the Ingredients:
    In a large bowl, combine all the nuts, seeds, dried fruits, and oats (if using). In a separate bowl, mix honey (or maple syrup), coconut oil, vanilla extract, and salt. Pour the wet ingredients into the dry mixture and mix well until everything is coated.
  3. Shape the Cookies:
    Scoop out about a tablespoon of the mixture and shape it into a flat disc or round cookie. Place it on the prepared baking sheet, leaving a small gap between the cookies.
  4. Bake:
    Bake for 12–15 minutes or until the edges are golden brown. Be careful not to overbake as the dried fruits can burn easily.
  5. Cool Down:
    Let the cookies cool completely on the baking sheet. They will firm up as they cool.
