Delicious Pineapple Drizzle Cake

  • 2 ½ cups all-purpose flour

  • 1 ¾ cups granulated sugar

  • 1 teaspoon vanilla extract
  • 1 cup crushed pineapple (drained, reserve juice)

For the Glaze:

  • 1 cup powdered sugar
  • 2–3 tablespoons pineapple juice (reserved from the canned pineapple)

Instructions:

  1. Prepare the Cake Batter:
    • Preheat your oven to 350°F (175°C). Grease and flour an 8- or 9-inch round cake pan.
    • In a medium bowl, whisk together the flour, baking powder, and salt.
    • In a large bowl, cream the butter and sugar until light and fluffy.
    • Add the eggs one at a time, mixing well after each addition.
    • Stir in the vanilla extract and crushed pineapple.
    • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  2. Bake:
    • Pour the batter into the prepared cake pan.
    • Bake for 45–50 minutes or until a toothpick inserted into the center comes out clean.
    • Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  3. Prepare the Glaze:
    • In a small bowl, whisk together powdered sugar and pineapple juice until smooth.
    • Adjust the consistency by adding more juice or sugar as needed.
  4. Decorate and Serve:
    • Drizzle the glaze over the cooled cake.
    • Allow it to set for a few minutes before slicing and serving.
