Garlic Butter Baked Shrimp and Rice Casserole

Ingredients:

  • 1 lb (450g) large shrimp, peeled and deveined
  • 2 cups cooked rice (white or jasmine)
  • 3 tbsp unsalted butter
  • 4 garlic cloves, minced
  • 1 cup chicken or vegetable broth
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • ½ tsp red pepper flakes (optional)
  • Salt and black pepper, to taste
  • 2 tbsp chopped parsley for garnish

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Spread the cooked rice evenly in a greased 9×13-inch baking dish.
  3. In a small saucepan, melt the butter over medium heat. Add minced garlic and sauté until fragrant (about 1 minute). Stir in the chicken broth, paprika, and a pinch of salt and pepper. Pour this mixture evenly over the rice.
  4. Toss the shrimp with olive oil, a pinch of smoked paprika, red pepper flakes (if using), salt, and black pepper in a bowl. Arrange the shrimp on top of the rice in a single layer.
  5. Sprinkle-grated Parmesan cheese over the shrimp and rice.
  6. Bake in the preheated oven for 20-25 minutes, or until the shrimp are pink and cooked through.
  7. Garnish with freshly chopped parsley and serve warm.
