Recipe:

Ingredients:

For the Crust:

  • 1 cup (226g) unsalted butter, softened
  • 1 3/4 cups (350g) granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1/4 tsp almond extract (optional)
  • 3 cups (375g) all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt

For the Filling:

  • 2 cans (21 oz each) cherry pie filling
  • 1/4 tsp almond extract (optional, for extra flavor)

For the Glaze (optional):

  • 1 cup (120g) powdered sugar
  • 2-3 tbsp milk
  • 1/2 tsp vanilla or almond extract

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper for easy removal.
  2. Prepare the Crust: In a large bowl, mix the butter and sugar until light and fluffy. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla and almond extract. Gradually mix the flour, baking powder, and salt until fully combined.
  3. Assemble the Bars: Spread two-thirds of the dough evenly into the prepared baking pan. Pour the cherry pie filling over the dough, spreading it evenly. Drop spoonfuls of the remaining dough over the cherry filling, leaving gaps for the filling to peek through.
  4. Bake: Bake for 35-40 minutes, or until the top is golden brown and the filling is bubbling. Remove from the oven and let cool completely.
  5. Add the Glaze: In a small bowl, whisk together powdered sugar, milk, and extract to create a glaze. Drizzle over the cooled bars.
  6. Serve: Cut into squares or rectangles and serve. Enjoy!

These cherry pie bars are perfect for parties, picnics, or a sweet after-dinner treat. Adjust the fruit filling to your liking for endless variations!
