Loaded Baked Potato with Steak and Sour Cream

Ingredients:

  • For the Potato:
    • 2 large baking potatoes
    • 2 tablespoons olive oil
    • Salt to taste

    • 200g (about 7 oz) steak (sirloin, ribeye, or your choice), cubed
    • 1 tablespoon olive oil
    • 1 teaspoon garlic powder
    • 1 teaspoon smoked paprika
    • Salt and pepper to taste

    • ½ cup sour cream
    • ½ cup shredded cheddar cheese
    • ¼ cup chopped green onions
    • Butter (optional)

Instructions:

  1. Prepare the Potatoes:
    • Preheat the oven to 400°F (200°C).
    • Wash and dry the potatoes. Rub them with olive oil and sprinkle with salt.
    • Wrap the potatoes in aluminum foil and bake for 45-60 minutes, or until tender when pierced with a fork.
  2. Cook the Steak:
    • While the potatoes are baking, heat olive oil in a skillet over medium-high heat.
    • Season the steak cubes with garlic powder, smoked paprika, salt, and pepper.
    • Sear the steak cubes for 2-3 minutes on each side until browned and cooked to your desired doneness. Set aside.

    • Once the potatoes are cooked, slice them open lengthwise and fluff the inside with a fork.
    • Add a dollop of butter (optional) and sprinkle shredded cheddar cheese on top.
