Recipe: No-Bake Tiramisu Cheesecake

Ingredients:

For the Crust:

  • 200g (about 2 cups) digestive biscuits or graham crackers
  • 100g (1/2 cup) unsalted butter, melted

For the Cheesecake Layer:

  • 500g (about 2 cups) cream cheese, softened
  • 250g (1 cup) mascarpone cheese
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups heavy whipping cream
  • 2 tablespoons coffee (cooled espresso)

For the Tiramisu Layer:

  • 1 cup strong brewed coffee (cooled to room temperature)
  • 2 tablespoons coffee liqueur (optional)
  • 200g (about 24 pieces) ladyfinger biscuits

For Garnishing:

  • Cocoa powder for dusting

Instructions:

  1. Prepare the Crust:
    • Crush the digestive biscuits or graham crackers in a food processor until they turn into fine crumbs. Combine with melted butter until the mixture resembles wet sand.
    • Press the mixture into the base of a springform pan, ensuring it’s even and tightly packed. Chill in the refrigerator while preparing the filling.
  2. Make the Cheesecake Layer:
    • In a large mixing bowl, beat the softened cream cheese, mascarpone cheese, powdered sugar, and vanilla extract until smooth and creamy.
    • In a separate bowl, whip the heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture.
    • Set aside 1/3 of this mixture to be layered later with coffee-soaked ladyfingers.
  3. Assemble the Tiramisu Layer:
    • Mix the brewed coffee with coffee liqueur in a shallow dish. Dip each ladyfinger biscuit briefly into the coffee mixture, ensuring they are soaked but not soggy.
    • Place a layer of coffee-soaked ladyfingers on top of the prepared crust in the springform pan.
  4. Layer the Cheesecake:
    • Spread half of the reserved cream cheese filling over the ladyfingers, smoothing the surface.
    • Add another layer of coffee-soaked ladyfingers on top, then spread the remaining cream cheese mixture over them.
  5. Chill and Set:
    • Cover the cheesecake with plastic wrap and refrigerate for at least 4-6 hours, or preferably overnight, to allow the flavors to meld and the cheesecake to set properly.
  6. Decorate and Serve:
    • Once set, remove the cheesecake from the springform pan. Dust the top generously with cocoa powder using a fine mesh sieve.
