Recipe: Pecan-Glazed Creamy Vanilla Cookies

Ingredients:

  • 1/2 tsp salt
  • 1/2 cup chopped pecans (optional)

For the Glaze:

  • 2 cups powdered sugar
  • 3–4 tbsp milk (or heavy cream for a richer glaze)
  • 1 tsp vanilla extract

Topping:

  • 1/2 cup chopped pecans, toasted

Instructions:

  1. Make the Cookies:
    • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
    • In a large bowl, cream together the butter and powdered sugar until light and fluffy. Mix in the vanilla extract.
    • Gradually add the flour and salt, mixing until a soft dough forms. Stir in chopped pecans if desired.
    • Roll the dough into 1-inch balls and place them on the prepared baking sheet, about 2 inches apart.
    • Bake for 12–15 minutes, or until the cookies are set and the bottoms are lightly golden. Remove from oven and let cool completely.
  2. Prepare the Glaze:
    • In a medium bowl, whisk together powdered sugar, milk, and vanilla extract until smooth. Adjust the consistency by adding more milk for a thinner glaze or more powdered sugar for a thicker glaze.
  3. Decorate the Cookies:
    • Dip the top of each cooled cookie into the glaze, letting any excess drip off. Place the cookies on a wire rack or parchment paper.
    • While the glaze is still wet, sprinkle toasted chopped pecans over the top.
  4. Set and Serve:
    • Allow the glaze to set completely before serving or storing. Store cookies in an airtight container for up to 5 days.
