  • 1/2 cup (100g) granulated sugar
  • 2 cups (250g) all-purpose flour

  • 1 cup (200g) granulated sugar
  • 1/2 cup (120ml) heavy cream
  • 1/2 cup (115g) unsalted butter
  • 1/4 cup (85g) golden syrup or light corn syrup
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

For Topping:

  • Flaky sea salt, for sprinkling

Instructions:

  1. Prepare the Shortbread Base:
    • Preheat your oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper.
    • In a bowl, cream together softened butter and sugar until smooth.
    • Gradually add flour and salt, mixing until the dough comes together.
    • Press the dough evenly into the prepared pan and prick it with a fork to prevent bubbling.
    • Bake for 18-20 minutes or until golden brown. Allow to cool completely.
  2. Make the Caramel Layer:
    • In a saucepan, combine sugar, butter, golden syrup, and heavy cream. Cook over medium heat, stirring constantly, until the sugar dissolves.
    • Increase the heat slightly and simmer for 8-10 minutes, stirring occasionally, until the mixture thickens and turns a deep caramel color.
    • Remove from heat and stir in vanilla extract and salt.
  3. Assemble the Bars:
    • Pour the hot caramel over the cooled shortbread base, spreading it evenly with a spatula.
    • Allow the caramel to set at room temperature for about 30 minutes or refrigerate for faster cooling.
  4. Finish with Sea Salt:
    • Once the caramel has set, sprinkle flaky sea salt evenly over the top for that perfect sweet-salty balance.
  5. Slice and Serve:
    • Use a sharp knife to cut the bars into squares or rectangles. Serve and enjoy!
