Sausage and Sauerkraut Skillet

Ingredients:

  • 4-5 smoked sausages or kielbasa, sliced
  • 2 cups sauerkraut (drained)
  • 4 medium-sized potatoes, peeled and cubed
  • 1 medium onion, chopped
  • 2 tablespoons vegetable oil or butter
  • 1 teaspoon caraway seeds (optional)
  • 1/2 cup chicken or vegetable broth
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Prepare the Ingredients:
    • Slice the sausages into bite-sized pieces.
    • Peel and cube the potatoes.
  2. Cook the Potatoes:
    • In a large skillet, heat 1 tablespoon of oil or butter over medium heat.
    • Add the cubed potatoes and cook for 10-12 minutes, stirring occasionally, until golden brown and tender. Remove from the skillet and set aside.
  3. Sauté the Onion and Sausage:
    • Add the remaining oil or butter to the skillet.
    • Sauté the chopped onion until soft and translucent.
    • Add the sliced sausage and cook for another 5-7 minutes until browned.
  4. Combine and Simmer:
    • Return the cooked potatoes to the skillet.
    • Add the sauerkraut, caraway seeds (if using), and broth.

    • Stir well and let everything simmer for 10 minutes, allowing the flavors to meld together.
