Ingredients:

  • 2 ribeye or filet mignon steaks (about 1-inch thick)
  • Salt and black pepper, to taste
  • 2 tbsp olive oil
  • 1 tbsp unsalted butter

For the Mushroom Sauce:

  • 1 tbsp butter
  • 1 cup mushrooms, sliced (cremini or button mushrooms work well)
  • 2 cloves garlic, minced
  • 1/2 cup beef broth
  • 1/2 cup heavy cream
  • 1 tsp Dijon mustard
  • 1 tsp fresh thyme (or 1/2 tsp dried thyme)
  • Salt and black pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions:

  1. Prepare the Steak:
    Pat the steaks dry with a paper towel. Season both sides generously with salt and pepper.
  2. Sear the Steak:
    In a large skillet, heat the olive oil over medium-high heat. Add the steaks and cook for 3-4 minutes on each side (for medium-rare) or until they reach your desired doneness. Adjust cooking time as needed. Remove the steaks from the skillet and set aside, covering them loosely with foil to keep warm.
  3. Make the Mushroom Sauce:
    In the same skillet, melt the butter. Add the sliced mushrooms and cook for about 4-5 minutes, or until they’re golden brown. Stir in the garlic and cook for another minute.
  4. Add Liquids and Seasoning:
    Pour in the beef broth, scraping up any browned bits from the bottom of the pan. Let it simmer for 2-3 minutes, reducing slightly. Stir in the heavy cream, Dijon mustard, and thyme. Allow the sauce to simmer for another 3-5 minutes, or until it thickens to your liking. Season with salt and pepper to taste.
  5. Serve:
    Place the steaks on plates and spoon the creamy mushroom sauce over them. Garnish with freshly chopped parsley.
