  • 1 package of crushed graham crackers (about 1.5 cups)
  • 1/2 cup melted butter
  • 1 can (20 oz) crushed pineapple (drained)
  • 1 package (8 oz) cream cheese (softened)
  • 1 cup powdered sugar
  • 1 container (8 oz) whipped topping (e.g., Cool Whip)
  • 1/2 cup shredded sweetened coconut (toasted)
  • Optional: whipped cream for garnish

Instructions:

  1. Prepare the Base:
    • Mix crushed graham crackers and melted butter in a bowl until well combined.
    • Press the mixture into the bottom of a 9×9-inch dish to form a firm crust. Chill in the refrigerator for 10 minutes.
  2. Make the Cream Cheese Layer:

    • Fold in half of the whipped topping and mix gently.
  3. Assemble the Layers:
